Semplicemente Rosso by Cascina degli Ulivi comes from a blend of 50% Barbera and 50% Dolcetto grapes cultivated according to biodynamic criteria and hand-harvested between the months of September and October. In the cellar, the grapes were transformed into must, using 15% whole clusters. The maceration in contact with the skins lasted for a week - with the traditional submerged cap technique - in 25-hectolitre oak barrels. The aging took place in the same containers for a period of 10 months. There was no filtration in the production process.
