Corpo medioThe Dolcetto di Pio Cesare is part of the corporate line dedicated to everyday wines, those wines for regular, domestic, and relaxed consumption of the most traditional Piedmont. The grapes, 100% Dolcetto di Pio Cesare extrapolated, come from the family Boffa's vineyards in Treiso (Il Bricco) in the Barbaresco area and in Sinio (Val di Croce and Bricco dello Stornello). Vinification is carried out in steel with a short maceration and temperature control; the wine always remains to refine in steel until the moment of bottling, in the March following the harvest.
The extrapolated NAME OF THE WINE from Alba by Pio Cesare appears ruby red with crimson highlights. The nose is very aromatic and fragrant, with hints of raspberry juice, strawberry jam, black pepper, mountain herbs, and resinous balsams. The palate has good structure, dense tannins, and a slightly almond finish. To be served at cellar temperature, either with a good pizza and regional cold cuts, or with more elaborate dishes, such as rabbit plin with rosemary.
