The Etna Bianco Pietrarizzo di Tornatore is obtained from 100% Carricante grapes grown in the Pietrarizzo area, located in the territory of the municipality of Castiglione di Sicilia, on the north side of Mount Etna. After the manual harvest, which took place in the second decade of October with a yield of 60 quintals per hectare, the grapes were transported to the cellar where a further selection took place. The winemaking process started with destemming and crushing followed by a gentle pressing. Alcoholic fermentation took place in wood at a temperature of 15-16°C. Before commercialization, the Etna Bianco DOC Pietrarizzo by Tornatore aged for 5 months on fine lees (residues of fermentation) in 50-hectoliter oak barrels and for an additional 3 months in the bottle.

The Etna Bianco Pietrarizzo di Tornatore appears in the glass with a straw yellow color and greenish reflections. On the nose, it expresses aromas of white peach and exotic yellow fruit intertwined with citrusy hints of grapefruit and delicate notes of flint. The palate is rich and pleasant, enhanced by a gentle freshness and a distinct minerality that lingers in the long finish. It pairs well with fresh and semi-mature cheeses, as well as vegetarian dishes and tasty seafood recipes based on white fish, shellfish, and crustaceans.
