Vermentino Mood di Sant'Eufemia: THE WINEMAKING PROCESS

The Vermentino Mood di Sant'Eufemia is a white wine obtained from Vermentino grapes in purity. The vineyards are located in the area of Cisterna di Latina (LT). The reference vineyards, grown with spur-pruned cordon training, root in soils characterized by pozzolana and volcanic lapilli. The harvest was carried out by hand in the first week of September. In the cellar, the grapes were gently pressed to produce the must. During the white winemaking process, alcoholic fermentation took place in stainless steel tanks at a controlled temperature of 15°C. The wine was refined for several months in stainless steel tanks in contact with the fine lees.

The Vermentino Mood di Sant'Eufemia stands out with a straw yellow color with greenish reflections. On the nose, it offers scents of yellow pulp fruit and wildflowers intertwined with notes of Mediterranean herbs and citrus. On the palate, it is fresh and distinctly mineral, showing great taste-olfactory consistency. It pairs well with cheeses, vegetarian dishes, as well as tasty seafood preparations. Try it with risotto with cuttlefish and peas.
