Corpo medioThe Viognier by Casale del Giglio is born from 100% Viogner grapes, a variety originating from the Rhone Valley that today is able to express itself at its best in different terrains including that of Lazio. The Casale del Giglio winery, on the other hand, has focused a lot on the enhancement of some French vines spread all over the world (and for this reason defined as "international") in relation to the soil and the typical microclimate of the province of Latina where the company's vineyards are born. For this Viognier Lazio IGT 2017, the grapes were harvested in two phases, the first at optimal ripeness, the second with slight over-ripening of the bunches. The winemaking process began with a cryomaceration (cold maceration that allows the extraction of primary substances and aromas from the grapes) carried out at a temperature of 7 to 8° C for 8-10 hours. The alcoholic fermentation started spontaneously at a temperature of 17 to 18° C with a duration of about 10 days. Before being bottled, the wine rested for a few months in stainless steel vats on its own yeasts.
Casale del Giglio's Viognier Lazio IGT shows a brilliant straw yellow colour. The nose reveals aromas of acacia, broom and wildflowers that are combined with clear notes of peach, apricot and yellow pulp fruit. Agile and fruity, on the palate, it expresses a pleasant mineral freshness that invites the second sip. At the table, it goes well with fresh and semi-aged cheeses as well as vegetarian dishes and seafood recipes.
