Corpo leggeroThe Verdicchio dei Castelli di Jesi Classico di Fazi Battaglia is born from vineyards located in the heart of the Classic area of the Castelli di Jesi, arranged at altitudes closest to sea level, with a south exposure, on sandy and rich in loam soils. After a careful selection of the best bunches, a soft pressing of the whole grapes is carried out. Fermentation takes place in stainless steel tanks at a constant temperature between 14-16 °C (the temperature control is used to ensure that the fermentation develops slowly and constantly and that there are no fermentation blocks, with the death of wine yeasts and the possible triggering of fermentations caused by other fungi or bacteria not suitable; in the case of white and rosé wines, it is particularly important also to preserve the aromas). After fermentation, the wine ages on its fine lees until January.
The Fazi Battaglia Classic Verdicchio is straw yellow with greenish reflections. On the nose, it is young with notes of apple and pear, flowery with hints of broom, and balsamic with traces of anise. The palate is fresh and sapid, with slight hints of almond on the finish. Good with ricotta and spinach ravioli dressed in a classic way with butter and sage.
