The Casamatta di Bibi Graetz has been produced with 100% Sangiovese grapes from the company's vineyards located between the north area of Florence and the south area of Siena. The harvest took place between the end of September and mid-October. During the red winemaking process, alcoholic fermentation was initiated by indigenous yeasts in stainless steel tanks with maceration of the must on the skins for a period of 7 days. The aging process lasted for 6 months in stainless steel.

CASAMATTA BIBI GRAETZ: TASTING NOTES

The WINE_NAME presents itself with a ruby red color and bright reflections. On the nose, it boasts aromas of cherry and small red fruits combined with hints of violet and jujube, as well as notes of Mediterranean herbs. The palate is fresh, fruity, and with good sapidity supported by smooth tannins and a persistent finish. It pairs well with cold cuts and cheeses, as well as tasty meat-based dishes, especially those with red meats. The tasting experience is intense and balanced, with a soft tannic texture and a lingering fruity and spicy finish.
