Corpo medioThe Soave La Rocca di Pieropan is produced since 1978 and comes from the homonymous vineyard located on the hill of Monte Rocchetta, near the medieval Scaligero castle of Soave, a fascinating location with a characteristic microclimate. The soil is limestone, rich in clay, and we are at an altitude of 200 - 300 meters above sea level, with a southwest exposure. The Garganega grapes, which make up this 100% cru, are hand-harvested at the end of October, often with a double pass, to select the ripest grapes; after destemming, pressing, and a short maceration, the free-run juice ferments at a controlled temperature (16°-18°C) in 2500-liter barrels and 500-liter casks. The aging also takes place in wood for about 15 months in contact with the fine lees, to enrich it in structure and complexity. After bottling, the wine rests in glass before being commercialized.
The Soave Classico La Rocca by Pieropan has a straw yellow color with intense golden reflections. On the nose, it smells of exotic fruit, citron pumpkin jam, ginger, acacia flowers, smoked white pepper, mineral nuances; on the palate, it is broad, savory, long on sweet spices. An important wine for important dishes, such as rabbit and black truffle risotto, or red shrimp from Mazara del Vallo marinated in honey and ginger.
