Barolo Prapò di Paolo Scavino: The Barolo Prapò di Paolo Scavino is produced from 100% handpicked Nebbiolo grapes in the area of Serralunga d’Alba, in the province of Cuneo. The winemaking process included an alcoholic fermentation phase, activated by indigenous yeasts, which took place in stainless steel tanks for 20-30 days. The maceration of the must in contact with the skins lasted for 12 days. Before bottling, the Barolo Prapò di Paolo Scavino was aged in French barriques and large barrels for a period of 24 months.
BAROLO PRAPÒ PAOLO SCAVINO: TASTING NOTES
The Barolo Prapò di Paolo Scavino presents a ruby red color with garnet reflections. On the nose, scents of plum and ripe wild berries stand out, combining with hints of potpourri and delicate notes of licorice and dark spices. Completing the olfactory profile are balsamic hints of undergrowth and mineral nuances. The palate is enveloping and elegant, supported by polished tannins and a gentle fresh-savory touch that lingers in the long finish. This wine pairs well with aged cheeses and flavorful meat dishes, particularly red meats or game.Product specifications
