The Schiava di Cantina d'Isera is the result of a short maceration on the skins and a subsequent completion of fermentation in white at controlled temperature. The vineyards of this variety, once the most widespread in the region, are located on the hill in the municipalities of Isera and Nogaredo, and are grown using the traditional pergola trentina doppia system. We are between 200 and 300 meters above sea level with an east exposure, on mixed soils composed of gravel, limestone, basalt, and sands, with good draining capacity. The grapes are hand-harvested in the second half of September and, as mentioned above, undergo a light maceration and static settling, then ferment at low temperatures. The subsequent aging is carried out in steel: the whole process is aimed at preserving the original aromatic profile as intact as possible.
The Schiava di Cantina d'IseraSchiava from Cantina d'Isera presents itself with a bright and intense pink color, reminiscent of cherry and ruby tones. On the nose, it is straightforward, fresh, and elegant: raspberry, rose petals, slight hints of pine resin, and a subtle rocky minerality. In the mouth, it is savory and refreshing, with fruity acidity and a subtle structure. It is best enjoyed fresh, paired with various dishes, from pizza to lightly smoked cold cuts, from smoked trout carpaccio with pink peppercorns to rigatoni alla gricia.
