Corpo medioThe Sauvignon di Livon is born from 100% hand-picked Sauvignon di LivonSauvignon Blanc grapes. The vineyards used, trained in Guyot style, are located on marly and clayey soils in the area of Dolegna del Collio (GO). In the cellar, the grape bunches underwent an 8-hour pre-fermentative cold maceration to facilitate the extraction of primary aromas. Alcoholic fermentation took place in stainless steel tanks at a controlled temperature of 18°C. The wine was aged for 5 months in stainless steel tanks followed by a short period in the bottle.
The Sauvignon di LivonSauvignon Collio by Livon presents a straw yellow color with greenish reflections. On the nose, it displays aromas of tropical yellow pulp fruit and white flowers combined with herbaceous notes of tomato leaf. The palate is soft and balanced, with persistent mineral freshness. Ideal as an aperitif, it pairs well with cheeses, vegetarian dishes as well as tasty seafood preparations, especially those based on shellfish.
