Corpo medioThe Pithos Rosso di COS is inspired by the Greek word Pithos, a terracotta jar with a characteristic shape. The Frappato di Vittoria (40%) and Nero d'Avola (60%) grapes are cultivated organically at an altitude of about 250 meters, on red soils with sub-Apennine sands of Pliocene origin. The vineyards are located in the heart of the Cerasuolo di Vittoria appellation, between Acate and Vittoria, distributed in the Bastonaca and Fontane districts, with vines averaging 20 years of age. Harvest takes place between late September and early October. Fermentation occurs spontaneously in terracotta amphorae, with skins and indigenous yeasts; aging is carried out in terracotta initially and then in bottle.
The Pithos Rosso di COSPithos Rosso from Cos appears in the glass with an intense and brilliant ruby color. The nose is very expressive and penetrating: red fruits, fresh and dried flowers, Mediterranean scrub, a slight salinity, hints of tomato passata, and smoky notes. On the palate, it is well-balanced, juicy and fresh, savory and long. It is best enjoyed on its own, then paired with a lightly spicy and hot beef tartare, or with grilled pork scamerita.
