Tormaresca's Negroamaro Rosato Salento IGT Calafuria was made from 100% Negroamaro grapes grown along the Adriatic coast in the company's vineyards of the Maime estate in San Pietro Vernot (BR). Here, the landscape is characterised by limestone rocks that alternate with wonderful beaches typical of the Alto Salento. For this young and intriguing rosé, the grapes have been selected by hand, de-stemmed and subjected to soft pressing. The must was then sent to natural decantation at 10° C. The alcoholic fermentation took place in steel vats at a temperature of 16° C while the refinement took place for a few months, again in steel, on fine lees. The latter are nothing more than the residues of the fermentation process capable, through contact, of enriching the wine's structure and aromas.
The Negroamaro Rosato Salento IGT Calafuria by Tormaresca is presented in the glass with a pale cerasuolo pink colour. On the nose, it releases fragrant aromas of violets and lavender that combine with notes of pomegranate and small red fruits. Soft and pleasant, on the palate, it reveals an excellent fresh-savoury balance that invites the second sip. Versatile in nature, at the table it goes well with various types of cold cuts and vegetarian dishes. Also excellent in combination with seafood recipes based on fish and crustaceans.
