Etna Rosso Cauru by Torre Mora is 85% Nerello Mascalese and 15% Nerello Cappuccio. Cauru originates from two different crus: Contrada Alboretto Chiuse del Signore, in the municipality of Linguaglossa, and Contrada Dafara Galluzzo in Rovvitello, municipality of Castiglione di Sicilia. The name "cauru", meaning "hot" in Sicilian, is a clear reference to the warmth and energy contained in the volcanic soil. The grapes are harvested in early October; once destemmed and lightly pressed, they undergo a 24-hour cold maceration followed by a one-week maceration with alcoholic fermentation. The malolactic fermentation starts spontaneously, and then the wine ages for 3 months in 30 hl barrels.
Etna Rosso Cauru by Torre Mora is bright and transparent ruby red. On the nose, it has aromas of blackberry, cherry jam, violet, rose petals, small red fruits, and even date, with hints of a rust-like minerality. The palate features a nice freshness reminiscent of bergamot, lively tannins, and a finish of herbs and spices. A very versatile wine, it is perfect slightly chilled with arancine or with scacce ragusane.
