The Beyond The Clouds di Elena Walch is a blend of native white berry grapes with a predominance of Chardonnay grown in the Terlano area, in the province of Bolzano. During the white winemaking process, alcoholic fermentation occurred in wood with weekly batonnages that continued for a period of 3 months. The aging of this award-winning Supercuvée was 10 months in French barriques plus an additional 6 months in the bottle.

The Beyond The Cloud Bianco Alto Adige by Elena Walch presents itself in a straw yellow color with golden reflections. On the nose, it releases aromas of tropical yellow fruits and white flowers that blend with hints of roasted hazelnut, vanilla, and sweet spices. The palate is intense and mineral, with a layered taste played on fruity and floral notes and a long finish. It pairs well with cheeses, vegetarian dishes, as well as savory seafood recipes based on white fish, shellfish, and crustaceans.
