The Nova Domus Riserva di Terlan is born from a blend of Pinot Bianco (60%), Chardonnay (30%), and Sauvignon Blanc (10%) grapes grown in the Terlano (BZ) area. The reference vineyards, facing South and South-West, are located at an altitude between 300 and 600 meters above sea level. After manual harvesting, the grapes were transported to the cellar where they were pressed whole for the production of the must. Alcoholic fermentation took place in large 30-hectoliter wooden barrels at a controlled temperature and was followed by a partial malolactic fermentation (only for Pinot Bianco and Chardonnay). Aging occurred for 12 months in large wooden barrels in contact with the lees. The blending took place three months before bottling.
The Nova Domus Riserva Alto Adige from Terlan presents itself with a straw yellow color with greenish reflections. On the nose, it expresses aromas of ripe yellow pulp fruit accompanied by herbaceous notes of anise, sage, and mint, as well as delicate citrusy notes. The olfactory profile is complemented by hints of vanilla and sweet oriental spices. The taste is intense and structured, deeply mineral and of excellent taste-olfactory coherence. The fruity and spicy finish is long. It pairs well with cheeses, vegetarian dishes, and flavorful seafood recipes at the table.
