The Angimbé di CusumanoAngimbé from Cusumano is produced from Chardonnay (70%) and Insolia (30%) grapes grown on the estate of Ficuzza in the territory of Piana degli Albanesi (PA). The original vineyards, facing east and southeast, grow on soils of Franco-Argilloso matrix, at an average altitude of 700 meters above sea level. The winemaking process began with a cold maceration phase at a temperature of 8°C for 12 hours, facilitating the extraction of the grape's primary aromas. Alcoholic fermentation, which converted sugars into alcohol, took place at a controlled temperature of 18-20°C. Before being released to market, the Angimbé di CusumanoAngimbé Terre Siciliane Bianco IGT from Cusumano aged in stainless steel for 4 months on fine lees (residues from fermentation) and for a short period in the bottle.

The Angimbé di CusumanoAngimbé expresses aromas of tropical yellow pulpy fruit that blend with broom and yellow wildflower scents, along with delicate citrus notes. The taste is soft and pleasant, enhanced by a beautiful freshness and a marked minerality that lingers in the finish. Excellent as an aperitif, it pairs well with fresh and semi-mature cheeses, as well as vegetarian dishes and tasty seafood recipes based on white fish, shellfish, and crustaceans.
