The Spumante Pinot Nero Metodo Classico Nature Pas Dosè di Monsupello from Monsupello was obtained from 90% Pinot Noir and 10% Chardonnay grapes grown in the hilly area of the municipalities of Olive Gessi and Torricella Verzate, in the province of Pavia. The reference vineyards are exposed to the Southeast and lie on clay-limestone soils. After soft pressing of whole bunches, the flower must (in this case 45% of the must obtained from the first pressing) is vinified in white (without maceration in contact with the skins) with alcoholic fermentation at a controlled temperature of 18°C. After a short refinement in steel, the cuvée was created through blending. Following the rules of the Classic Method, at the time of bottling, the liqueur de tirage was added, which is a mixture of wine, sugar, and selected yeasts to initiate the second fermentation responsible for the production of the bubbles. Before entering the market, the Spumante Pinot Nero Metodo Classico Nature Pas Dosè di Monsupello was aged for at least 28 months in contact with the yeasts. As "pas dosé," only base wine was added during the topping-up phase that follows the removal of fermentation residues.

The Spumante Pinot Nero Metodo Classico Nature Pas Dosè di Monsupello from Monsupello shines with an intense straw yellow color enhanced by a fine perlage. On the nose, aromas of ripe yellow pulp fruit emerge, combining with hints of cassis and fragrant notes of bread crust and toasted dried fruit. The palate is soft and elegant, dignified by a gentle freshness that lingers in the long almond finish. Excellent as an aperitif, it pairs well with fresh and semi-aged cheeses as well as vegetarian dishes and enticing sea recipes based on white fish and shellfish.Product specifications
