Corpo medioThe Sauvignon del Pompiere di Schiopetto is with 2020 in its first vintage; that of the Pompiere line is the most immediate and simple version compared to the historical classic label of Mario Schiopetto produced since the seventies. This vine, originally from the Bordeaux region, has found optimal soil and climate conditions in Friuli; cultivated in the hills, it prefers clayey and fresh soils and produces small clusters with medium-sized berries. The grapes are harvested by hand in early September and vinified at low temperatures to preserve the characteristic aromas, then the wine ages 4 months in steel and another 2 in the bottle. Osteria ai Pompieri was the historic family restaurant thanks to which Mario fell in love with wine and decided to dedicate himself body and soul to it.
The Sauvignon del Pompiere di Schiopetto is bright straw yellow with greenish reflections; the nose is recognizable, with sparkling notes of kiwi, elderberry, hawthorn, green apple, citrus and burnt rock. The sip is fresh and enveloping at the same time, with precise correspondence to the aromatic profile. The combination with a traditional dish from the Venetian lagoon is interesting: the risotto di gò (the goby, tasty bottom fish).
