Corpo leggeroThe Sauvignon di Casale del Giglio is the result of an in-depth study on the introduction of this vine, originating in the Bordeaux area, in the Agro Pontino. Sauvignon is a vine to be cultivated in forms of cultivation that do not excessively expose the bunches to direct sunlight, it is rich in photolabile aromas that can easily oxidise. The harvest usually takes place in the first days of September, to preserve a good acidity content of the grapes, at the same time ensure good ripening and avoid the appearance of an excessive vegetable scent. After the soft pressing and the selection of the must, the alcoholic fermentation is induced very quickly, in order to preserve all the aromatic characteristics typical of the grape. At the end of fermentation, the temperature of the wine is reduced to about 8° C to avoid the start of malolactic fermentation. The Sauvignon is bottled between January and February.
Casale del Giglio Sauvignon has a lively straw yellow colour; on the nose, it is generous with aromatic herbs, first of all sage, on a background of good minerality. The sip is fresh, savoury and long. Good in the company of a zucchini carbonara.
