The Cabernet Sauvignon Pighin we present comes from a medium-textured soil, enriched by patches of gravel that lend complexity to the vineyard. The vines are trained using the high-intensity Guyot system, which allows optimal growth of the vines. Vinification is carried out using the technique of maceration in red wine at a controlled temperature, varying from +10° to +28°C for 10 days, in order to best extract the aromatic compounds. After fermentation, the wine matures for 2 months in stainless steel tanks, and then matures for 12-18 months in oak barrels from both Slavonia and France, and rests further in the bottle for 6 months before being marketed.
The wine has a brilliant ruby red colour, heralding a rich and complex aromatic bouquet. Spicy notes are perceived on the nose, with hints of black cherry, small berries, green pepper and dried hay, which combine in an enveloping bouquet. On the palate, the Cabernet Sauvignon is characterised by a good structure and pleasant warmth, accompanied by a slight tannicity. Flavours of raspberries and blackberries blend with a subtle hint of violets, giving balance and character. Excellent with roasts, game and grilled meats, it is a wine that expresses itself best when served at a temperature between 18° and 20°C, with the bottle uncorked half an hour beforehand. With good storage, it is a wine that lends itself to long-lasting consumption, with a shelf life of 5-6 years.
