Corpo medioThe Sauvignon Ronco del Cerò di Venica is an important wine for the company because it evokes its origins: it was from the first vineyard purchases on the Cerò hill that everything began in 1930. The vines of this Sauvignon are located in the homonymous locality, at various altitudes and exposures, resulting in different grape ripening times and, therefore, different harvest times. The soils of Collio are made up of stratified marls and Eocene sandstones, known as "Ponka." The 2019 vintage was harvested between August 30 and September 19; the grapes were macerated at a low temperature for one day, with a protective recirculating carbonic cap. The mass fermented and aged on lees for 6 months in steel for 90%, in large wooden barrels for the remaining 10%; to be assembled and then bottled under the full moon starting from late March.
The Sauvignon Ronco del Cerò di Venica is a pale straw yellow wine with greenish reflections. The olfactory spectrum is broad: ranging from tropical fruit notes (mango, papaya, and passion fruit) from vineyards facing south, to delicately vegetal notes (tomato leaf, elderflower, gooseberry), and hints of yellow peach, grapefruit, and salty breezes. On the palate, it is fresh, savory, soft, and with a long mineral persistence. Very good with San Daniele ham accompanied by a Sicilian yellow grapefruit salad.
