The Ribolla Gialla I Fiori del Borgo by Borgo Conventi is produced from vineyards on the right bank of the river Isonzo, spread on mostly flatland, whose plants vary in age between 10 and 18 years and rest on mixed clay and structured soils. Fermentation takes place in stainless steel tanks with selected yeasts at a controlled temperature (temperature control serves to ensure that fermentation develops slowly and constantly and that there are no fermentation blocks, with the death of the wine yeasts and the possible triggering of fermentation by other unsuitable fungi or bacteria; in the case of whites and rosés, it is also particularly important to preserve the aromas). The wine then rests, again in stainless steel vats, until the following spring, when it is bottled.

The Ribolla Gialla Isonzo I Fiori del Borgo di Borgo Conventi has a straw yellow colour. On the nose, it is delicate, with a floral and fruity bouquet, with aromas of jasmine, fresh almond and lime. At the sip, it presents a balance of acid-sapid components, aromatic correspondence to the nose and great drinkability. A perfect aperitif, especially in retro style, in the company of stuffed sandwiches, tuna vol au vent or bresaola and ricotta rolls.
