The Pinot Bianco Sanct Valentin di San Michele Appiano has been produced from 100% handpicked Pinot Bianco grapes in the territory of Appiano Monte, a hamlet of Appiano (BZ). The vineyards here, facing South and South-East, are situated on gravelly soils characterized by the presence of limestone and clay, at an altitude ranging from 450 to 600 meters above sea level. After harvest and transportation to the cellar, 50% of the must underwent alcoholic and malolactic fermentation with maceration on lees in barriques and tonneaux, while the remaining 50% was vinified in large oak barrels. After resting for approximately 12 months in the same containers, the wine was blended and further refined for 8 months in stainless steel.
The Pinot Bianco Sanct Valentin di San Michele Appiano presents a straw yellow color with greenish reflections. On the nose, it reveals aromas of yellow-fleshed fruit intertwined with hints of white flowers and subtle notes of vanilla and oriental spices. The palate is enveloping and structured, supported by a clear fruity taste that lingers in a smoky and spicy finish. This wine pairs well with vegetarian dishes, rich seafood-based first and second courses featuring white fish, shellfish, and crustaceans. It also pairs excellently with white meats.
