The Grüner Veltliner Praepositus di Abbazia di Novacella is produced from 100% Grüner Veltliner grapes grown in the area of Bressanone, in the province of Bolzano. The original vineyards, consisting of 10-15 year old plants with south, southwest exposure, are located on permeable morainic soils, at an altitude between 650 and 700 meters above sea level. After the harvest, the grapes were subjected to the winemaking process: for 2/3 of the must, alcoholic fermentation (at a temperature of 17°C) and aging took place in stainless steel, while for the remaining part, the two phases occurred in 30-hectoliter oak barrels. The aging process lasted a total of 10 months. Before being released to the market, the Alto Adige DOC Praepositus Grüner Veltliner from Abbazia di Novacella rested in the bottle for 1 month.

In the glass, the Grüner Veltliner Praepositus di Abbazia di Novacella presents a straw yellow color with golden reflections. On the nose, it releases scents of quince and ripe yellow pulp fruit intertwined with hints of honey and delicate notes of white pepper. The palate is rich and harmonious, supported by an elegant fresh-savory trail that lingers in the finish marked by fruity and spicy notes. It pairs well with semi-matured cheeses, vegetarian dishes, and delicious seafood recipes based on white fish, shellfish, and crustaceans.
