The Latour a Civitella di Sergio Mottura is produced from 100% Grechetto grapes coming from the best selections of the five vineyards dedicated to Grechetto on the estate. During vinification, the initial phase of alcoholic fermentation took place in stainless steel, while the final phase in oak barrels located in the tuff caves of the estate. The aging process lasted for 9 months in oak barrels and a further 6 months in the bottle. La Tour in Civitella di Mottura is the flagship of the winery, born in 1994 thanks to the collaboration of Louis Fabrice Latour, a historic producer from Burgundy.
Latour a Civitella di Sergio Mottura appears in a straw yellow color with golden reflections. On the nose, it releases aromas of white pulp fruit mingled with hints of aromatic herbs, melted butter, and hazelnut notes. Completing the olfactory profile are subtle hints of vanilla and sweet spices. The palate is elegant and well-structured, enhanced by a pronounced minerality and a long, spicy finish. Excellent with semi-matured cheeses, rich seafood dishes, and white meat dishes like herb-infused chicken stew. Also recommended with dishes based on white meats, such as herb-infused chicken stew.
