As demonstrated by the document from the year 1237, signed by the Counts of Tyrol, the silver from Val Ridanna was by far the best in Europe, which is why the company decided to mature the best wine production in this isolated place, in complete darkness, at a constant cellar temperature of 7°C and a humidity of 95%: in the disused mine of Val Ridanna at 2,000 meters above sea level. The famous Vigna Kastelaz, where Elena Walch's Argentum Bonum is born, overlooking the village of Tramin, enjoys an absolutely privileged position: its completely south-facing exposure sets it apart from other vineyards in the region, mainly oriented towards the east or west. The beautiful terraced vineyards, arranged in narrow rows, positioned at about 360 meters above sea level, are mainly planted with Gewürztraminer and Merlot, and managed to ensure low yield and high grape quality; The soil here is mainly composed of limestone pebbles, sedimented over the centuries, and covered over time by humus and layers of rock such as granite and porphyry. Before soft pressing, the grapes remain about 6 hours with the skins, then the must is statically decanted, through temperature decrease. Fermentation is carried out in stainless steel at a controlled temperature of 18°C, after which the wine ages for a long time on its own yeasts, and once bottled, another four years in barrels in the mine of Val Ridanna.
