Corpo medioThe Freisa Frizzante Luna di Maggio di Cascina Gilli is born from the selection of the best grapes harvested from the historic vineyards of the company. Recovering historic grape varieties such as Freisa and Malvasia di Schierano and enhancing the typical characteristics of the territory with its expressions of Barbera and Nebbiolo: these are the objectives that have always characterized the production adventure of Cascina Gilli, started in 1983 by Gianni Vergnano (the first bottles were precisely those of a still Freisa with the 1985 harvest). The old Freisa vines are located on the Cornareto hill, at about 300 meters above sea level, on characteristic blue-gray clayey marl soils. The grapes are vinified in steel; liveliness is linked to the traditional processing that includes, before bottling, the addition in autoclave of a part of sweet wine that triggers a small refermentation. The name "Luna di Maggio" derives from the ancient tradition of bottling this wine according to the lunar calendar.
The Freisa d'Asti Frizzante Luna di Maggio from Cascina Gilli is intense ruby red. On the nose it is rich in wild berries, raspberry first and foremost, followed by hints of iris and violet, and notes of black pepper. The palate has delicate bubbles, beautiful slightly acidic freshness, plenty of central fruit, and a moderately bitter finish. Historically a snack and traditional dish wine, it pairs perfectly with the Piedmontese Crespone, a large-sized salami produced with prime meat.
