The Franciacorta Zèro di Contadi CastaldiZèro by Contadi Castaldi is produced from a blend of Chardonnay (50%) and Pinot Nero (50%) grapes. The harvest took place between late August and early September with a yield of 100 quintals per hectare. In the cellar, the grapes were gently pressed to extract the must. Alcoholic fermentation was initiated with the inoculation of selected yeasts, carried out in stainless steel for a period of 20 days. Malolactic fermentation was partially performed. The base wine was aged for 7 months, partly in stainless steel and partly in barrels. In accordance with the rules of the Metodo Classico, the second fermentation responsible for the sparkling took place in the bottle where Zèro di Contadi CastaldiZèro by Contadi Castaldi rested for 38-42 months in contact with the yeasts. The dosage, as the name suggests, is zero grams per liter.
In the glass, the Franciacorta Zèro di Contadi Castaldi presents itself with an intense straw yellow color enlivened by a fine perlage. On the nose, it releases aromas of blackcurrant and white-fleshed fruit mingling with citrusy hints of grapefruit, and notes of walnut peel and bread crust. The palate is intense and balanced, accentuated by an elegant minerality and a vertical freshness that calls for a second sip. Excellent as an aperitif, it pairs well with cold cuts and cheeses as well as with delicious seafood dishes.
