The Vintage Collection Extra Brut Millesimato di Cà del Bosco by Cà del Bosco is made from Chardonnay, Pinot Nero, and Pinot Bianco grapes. After manual harvesting in small crates and further careful selection in the cellar, the clusters were subjected to a gentle pressing in the absence of oxygen. The base wine musts obtained in this way were fermented in small oak barrels where they rested for 5 months. Once the blend was made, the wine was bottled and prepared for the second fermentation necessary for sparkling wine production. Before disgorgement, the Vintage Collection Extra Brut Millesimato di Cà del Bosco from Cà del Bosco rested for 48 months in the bottle in contact with the lees.

The Franciacorta Vintage Collection Extra Brut by Cà del Bosco shines in the glass with a straw yellow color enlivened by a fine perlage. On the nose, aromas of tropical yellow fruit intertwine with hints of honey and toasted dried fruit. Completing the olfactory bouquet are notes of yellow citrus and bread crust. The sip is intense and enveloping, supported by an elegant minerality and a crisp freshness that lingers in the long finish. Excellent as an aperitif, it pairs superbly with seafood dishes such as an exquisite cod in tempura.
