The Franciacorta Brut by Pavò is the manifesto of the company style. This project began a few years ago in Iseo, in the province of Brescia, on the north-eastern edge of the denomination. The Brut is made up of 90% Chardonnay and 10% Pinot Noir; the alcoholic fermentation of the must takes place partly in steel and partly in barriques. The malolactic fermentation then starts spontaneously, then the wine ages in steel for 5 months and again in wood for another 6. Bottled with the fermentation yeasts for the second fermentation, it rests sur lie for a period of at least 30 months.

FRANCIACORTA BRUT PAVÒ: TASTING

The Franciacorta Brut by Pavò Franciacorta has a bright straw yellow mantle, further illuminated by a fine and continuous perlage. The nose is inviting, with sunny notes of yellow peach, medlar, dandelion which are then enriched with touches of toasted almond, turmeric and vanilla. In the mouth, it is fresh, slightly savoury, creamy and with a spicy persistence. Excellent aperitif and very good with bites of hake in an almond crust.
