The Franciacorta di Montenisa Antinori is obtained from Chardonnay (78%), Pinot Nero (12%), and Pinot Bianco (10%) grapes grown at the Montenisa estate, located in the beautiful wine district of Franciacorta. For this prestigious sparkling wine, the first alcoholic fermentation of the cuvée (the finest part of the must, resulting from the first pressing) took place in stainless steel tanks. Following the rules of the Metodo Classico, the second alcoholic fermentation occurred in the bottle, with aging on the lees for 36 months. Subsequently, the "dégorgement," which is the disgorging process to remove the spent yeasts, took place. Before being released to the market, the EXTRACTION_WINE_NAMECuvée Royale Brut of Montenisa Marchese Antinori rested for an additional 3 months in the bottle.
The EXTRACTION_WINE_NAMECuvée Royale Brut of Montenisa Marchesi Antinori captivates in the glass with its pale straw yellow color enhanced by a fine and persistent perlage. On the nose, it expresses enveloping aromas of peach and white-fleshed fruit combined with fragrant hints of yeast and bread crust. The palate is elegant and lively, supported by an excellent balance between freshness and minerality. Excellent as an aperitif and a versatile wine for any meal, it pairs well with fresh and semi-aged cheeses, vegetarian dishes, and seafood recipes featuring white fish, shellfish, and crustaceans. Also a great match for white meats.
