Corpo medioFontana Candida's Frascati Superiore DOCG Vigneto Santa Teresa 2025 is a still white wine shaped by the volcanic hills south of Rome. Sourced from a named vineyard, it balances delicate aromas, freshness and a savoury finish, offering a distinct expression of the Frascati area that works particularly well with Mediterranean cooking.
The wine takes its name from Santa Teresa, where Fontana Candida has a vineyard of approximately 13 hectares. Its volcanic hillside setting is part of the wine-growing landscape of the Castelli Romani. The producer lists Malvasia Puntinata del Lazio, Malvasia di Candia and Greco as the grape varieties behind its fragrant and balanced character.
The varieties are harvested separately according to their ripening patterns. Malvasia del Lazio undergoes approximately 12 hours of cold skin contact, while the other grapes are gently pressed and vinified as white wine. After the must has settled, fermentation takes place at a controlled temperature of around 15–16°C. The wine is kept in temperature-controlled stainless-steel tanks until bottling, a process designed to retain aromatic clarity and freshness.
In the glass, it is bright straw yellow. The bouquet offers floral notes with hints of sage and apple. The palate is supple, fresh and savoury, with appealing persistence and an easy-drinking, medium-bodied structure.
Serve at 10–12°C in a tulip-shaped wine glass. It pairs with starters, Mediterranean pasta dishes, fish and white meats. For a distinctly Roman pairing, consider spaghetti alla carbonara or saltimbocca alla romana, dishes whose savoury flavours are complemented by the wine's freshness.
The 2025 vintage is presented in a 750 ml bottle. It is an appealing choice for anyone looking for a Frascati Superiore DOCG from a clearly identified vineyard, with a fresh style and a strong sense of place.
