The Etna Rosso Cavanera Rovo delle Coturnie di Firriato is born from Nerello Mascalese and Nerello Cappuccio grapes cultivated in the Verzella district of the Castiglione di Sicilia (CT) territory, on the north-eastern slope of Etna. The originating cru is characterized by a sandy loam soil of volcanic origin. The altitude ranges between 650 and 750 meters above sea level. The harvest took place manually between the second and third decades of October with a yield of 56-58 quintals per hectare. During vinification, alcoholic fermentation lasted for 18 days at a temperature of 24-25°C. The aging process was 9 months in oak barrels and an additional 20 months in the bottle.
CAVANERA ROVO DELLE COTURNIE ETNA ROSSO FIRRIATO: TASTING
The Etna Rosso Cavanera Rovo delle Coturnie di Firriato is ruby red with bright reflections. On the nose, it expresses scents of small red fruits and hints of rose and violet combined with notes of nutmeg, dark spices, and slight hints of iron. The palate is irresistibly intense and mineral, supported by silky tannins and a long fruity and spicy finish. It pairs well with aged cheeses and rich earthy recipes based on red meats.Product specifications
