Corpo medioEtna Bianco Mofete di Palmento Costanzo is one of the three wines in the line that comes from the youngest plants, aged between five and thirty years, and takes its name from a gaseous form, a product of secondary volcanic activity. The production area is the highly regarded Contrada Santo Spirito in Passo Pisciaro, on the north side of the volcano, where the soils are composed of black and brown volcanic sands with pebbles, rocks, and effusive material. The grapes, 70% Carricante and 30% Catarratto, are harvested at the end of September, gently pressed, and fermented in steel with selected indigenous yeasts; the aging then lasts about 4 months on the fine lees, always in steel, and is completed with 2 months in the bottle.
Etna Bianco Mofete di Palmento Costanzo appears in the glass with a straw yellow color. On the nose, it offers fragrant citrus notes of bergamot, strong mineral hints of flint, and pleasant memories of the Mediterranean scrubland; the taste is fresh, savory, broad, and well-balanced. It pairs very well with vegetable-based dishes, such as a courgette risotto, as well as with fish, maybe a swordfish carpaccio with herbs or linguine with clams.
