Etna Bianco Scalunera di Torre Mora is Carricante in purity; we are in Contrada Alboretto Chiuse del Signore, at an altitude of 650-700 meters. The plants are cultivated partly using a spurred cordon system, partly with the traditional small tree and the name "Scalunera," which in Sicilian means staircase, evokes the suggestive panorama in which they grow, a series of walls of lava stone almost forming an amphitheater. The grapes are hand-picked at the end of September, cooled with dry ice to prevent oxidation, gently pressed, and fermented at a controlled temperature for 15 days. The wine then ages on the lees for 3 months before bottling.

Etna Bianco Scalunera di Torre Mora presents itself with a lively straw yellow color with greenish hues. On the nose, it offers white fruit, melon, apple, and loquat, Mediterranean herbs, predominantly basil and sage, then jasmine and blooming broom, all veiled by a smoky minerality. In the mouth, it is flavorful, extremely fresh, and long with an almond-like aftertaste. Perfect for a morning snack with asparagus omelets.
