Corpo medioPalmento Costanzo's Etna Rosato Mofete is one of the three wines in the line that comes from the youngest plants, from five to thirty years old, and takes the scientific name of a gaseous form, the result of a secondary volcanic activity. The production area is the highly suitable Contrada Santo Spirito in Passo Pisciaro, on the north side of the volcano, whose soils are composed of black and brown volcanic sands with stones and rocks and effusive. The grapes of Nerello Mascalese in purity, harvested in mid-September, undergo a pre-fermentation cold maceration of 8 hours, then they are vinified in steel with selected indigenous yeasts; the refinement lasts about 4 months on the fine lees, again in steel, and is completed with 2 months in the bottle.
Palmento Costanzo's Etna Rosato Mofete has an elegant pink quartz colour. On the nose, scents of Sciacca and Ribera strawberries, violet candy, thyme and sage, all wrapped in a delicate mineral embrace; the sip is tasty, fresh and almost thirst-quenching. Extremely versatile wine, it is perfect for cheering up the late afternoon in the company of 13-month San Daniele ham and bread, as at the table with fried shrimp or simply with pizza.
