Melini's Chianti Governo all'Uso Toscano is made mainly from Sangiovese grapes with the addition of complementary varieties. The vineyards, trained using the spurred cordon system, grow on soils rich in alberese and galestro in the area of Radda in Chianti (SI). After the harvest, part of the grapes were dried in a drying room for about three weeks, while the rest underwent traditional red vinification. After racking, the addition of the dried grapes triggered a second fermentation, in line with an ancient Tuscan winemaking technique. The wine was then aged for a few months in stainless steel.

This Chianti shows a deep ruby red color. The bouquet opens with wild berry aromas and floral notes of violet and iris. On the palate, it is harmonious and well-structured, with integrated tannins and excellent sapidity. A great match for aged cheeses and hearty meat-based dishes, especially red meats.
