The vinification process foresees, in the blending phase, the addition of 25 "reserve wines" (ie referring to previous years) starting from 1985. The Champagne Premiere Cuvee Brut by Bruno Paillard was obtained through a second fermentation in the bottle, in compliance with the rules of the Champenoise Method (or Classic Method), ageing for 36 months on the lees.
The Champagne Premiere Cuvee Brut by Bruno Paillard offers a straw yellow colour enlivened by a fine perlage. On the nose, it releases enveloping aromas of yellow pulp fruit intertwined with citrus hints of green lemon and grapefruit and notes of black currant and black cherry combined with nuances of bread crust. The sip is elegant and enveloping, enhanced by a gentle freshness and a clear minerality that persists in the long finish. Ideal as an aperitif, at the table, it goes well with cured meats, fresh and semi-aged cheeses as well as vegetarian dishes and seafood recipes based on white fish, molluscs and crustaceans. Also excellent paired with white meats.
