Corpo medioThe Cesanese Rubillo di Principe Pallavicini is born among the volcanic hills around Rome and the Lazio Maremma. The company mainly cultivates white grapes, but in well-structured, moderately deep soils with a high component of lapilli, Cabernet Sauvignon, Merlot, Petit Verdot, and especially Cesanese are planted, all intended for single-varietal vinification. Rubillo is fermented with maceration on the temperature-controlled skins for about 2 weeks, then briefly aged in steel.
The Cesanese Rubillo di Principe Pallavicini has a compact ruby color with purple reflections. It smells of blackberries and forest fruits, roses and irises, black pepper and menthol balms. In the mouth, it is balanced, with non-intrusive tannins and a slightly bitter finish. Rubillo is a versatile everyday wine, good with both pasta all'amatriciana and roast pork, or simply with bread and cold cuts or pizza.
