It is a blend of Grillo, Inzolia, and Viognier grapes grown along the soft ventilated slopes of the Borgo Guarini estate, located in the heart of the Trapani countryside; the exposition is entirely north-facing, at an altitude of 300 meters on clayey-calcareous soils. The grapes are harvested separately over a period ranging from the last week of August, for the Viognier, to late September, for the Inzolia; they are gently pressed and ferment at low temperatures for 10-12 days, then the wine rests in steel tanks sur lie for 3 months, with daily stirring, and another 2-3 months in the bottle.
Baymore Bianco dei Bianchi di Firriato is straw yellow with bright greenish reflections. On the nose, it brings the characteristics of all three grapes: the fresh fruit and balsamic hints of the Inzolia combine with the memory of the dried flowers of the Grillo in the background of notes of jasmine, apricot, peach, and honeysuckle brought by the Viognier. On the palate, it is quite fresh, savory, and lively, with a distinctly characteristic aromaticity. It pairs well both with seafood and with land dishes, such as swordfish tartare with herbs and rabbit salad.
