The Barolo Ravera di Elvio Cogno is obtained from 100% Nebbiolo grapes (subvarieties Lampia and Michet) grown in the prestigious cru Ravera, located in the area of the municipality of Novello, in the province of Cuneo. The original vineyards, facing South, Southeast, are rooted in calcareous-clayey soils rich in minerals, at an altitude of about 380 meters above sea level. The vinification process took place in stainless steel at controlled temperature and included a post-fermentation maceration phase of 30 days. The aging occurred for 24 months in large Slavonian oak barrels of 25-30 hectoliters with a 90-day stay on the lees. Before being distributed, the Barolo Ravera di Elvio Cogno rested for an additional 6 months in the bottle.
The Barolo Ravera di Elvio Cogno presents itself with a garnet red color and orange reflections. On the nose, it expresses aromas of red fruits in jam that combine with floral hints of dog rose and balsamic notes of mint and licorice. Completing the olfactory picture are memories of roasted coffee and timid nuances of leather and undergrowth. The palate is powerful and elegant, enhanced by silky tannins and a gentle minerality that persists in the long finish. At the table, it pairs well with aged cheeses as well as elaborate dishes based on red meats or game.
