This grape is truly native to the territory of the Karst Plateau and is able to withstand drought (it can lose half of its leaves while maintaining its fruit production) and the violent Bora (with its 120 km/h winds). Edi Kante says of this wine, ""our ancestors placed the Vitovska vines in the front row in order to protect all of the other varieties against the Bora."" Kante's Vitosvska is planted on the Karst Plateau in Trieste, which is located at an average altitude of 250 meters above sea level and is composed of red earth and limestone soils that are characterized by strong drainage. For many years, Edi has dedicated himself to a strict selection of the best, healthiest plants with sparse, properly-sized bunches. The vinification of this white wine foresees 12 months of aging in old French oak barrels and 6 months of stabilization in steel tanks. The wine is bottled without filtration.
The Vitovska by Kante is a beautiful straw yellow color. On the nose, fruity hints of pear and citrus blend with aromatic sensations of Mediterranean scrub, ginger, and hay, and floral hints alternate with marine scents of iodine and salt. In the mouth the wine is minerally, slightly balsamic, and crisp, with an extremely lively finish. To be tasted strictly on its own, then served with spaghetti with fish roe.
