Corpo medioThe Viognier Soente di Falesco is made from 100% Viogner grapes grown in the area of Castiglione in Teverina (VT). The original vineyard covers an area of 5 hectares and is situated on friable, skeleton-rich soils at an average altitude of 300 meters above sea level. The winemaking process involved a cryomaceration phase (cold maceration allowing for the extraction of the grape's primary aromas) at 10°C for 5 hours. Alcoholic fermentation took place in stainless steel at a temperature ranging from 13° to 15°C. Before being released, the wine aged for 4 months in the bottle. Born from a significant experimental study on different Viogner clones conducted by the Cotarella family, this young white wine reflects its open and sincere character even in its name, Soente, derived from the elision of a consonant from the word "sovente."
The Viognier Lazio IGP Soente by Falesco appears in the glass with a straw yellow color and greenish reflections. On the nose, there are clear hints of white flowers, apple, peach, and yellow-fleshed fruit, combined with delicate notes of Mediterranean citrus. The taste is full and harmonious, enhanced by lively freshness and a distinct minerality that lingers in the finish. This wine pairs well with fresh cheeses, vegetarian dishes, and flavorful seafood recipes featuring white fish, shellfish, and crustaceans.
