The Ripa della Volta Valpolicella Superiore BIO 2021 comes from Valpantena, in the Romagnano area, from vineyards farmed according to an organic and sustainable philosophy. Corvina, Corvinone and other native varieties shape a nimble, territorial red wine focused on freshness and precise fruit rather than sheer concentration.

Stainless-steel vinification and bottle ageing

Fermentation takes place in stainless steel at controlled temperature, with around 10 days of maceration. The wine then matures for 12 months in stainless steel and a further 3 months in bottle, preserving its fruit and floral character without adding oak aromas.

Tasting profile and food pairings

Bright ruby in colour, it shows an elegant and fresh profile. The nose brings red berries and woodland fruit, floral violet notes and a mineral nuance. The palate is flowing, savoury and lively, with measured structure and a fresh finish. It pairs well with cured meats, flavourful cheeses and grilled meats. Recommended serving temperature: 18 °C.
