The Ripa della Volta Valpolicella Ripasso BIO DOC 2020 comes from Valpantena, in the Romagnano area, and reflects an organic approach focused on the traditional grape varieties of the zone. Corvina and Corvinone form the core of the blend, completed by smaller proportions of native varieties, for a red wine built around balance, softness and aromatic depth.

The character of Ripasso

After temperature-controlled fermentation, the wine undergoes a second passage on Amarone pomace for around 10 days. It then matures for about two years in 25-hectolitre Slavonian oak casks and French oak barriques, gaining richness and texture while retaining the approachable character typical of the appellation.

Tasting profile and food pairings

Deep red in colour, it opens with ripe red fruit and delicate spicy notes. The palate is harmonious and velvety, with soft tannins and a balanced, flowing finish. It pairs well with guinea fowl and other noble poultry, roast veal or pork, risottos and flavourful cheeses. Recommended serving temperature: 16-18 °C.
