Corpo medioThe Spumante Rosé di Monsupello is born from vineyards located in the first hillside range in the municipalities of Torricella Verzate and Oliva Gessi, in the Oltrepò Pavese, on a soil strongly characterized by limestone and clay, a feature that clearly influences the wine's character. The fairly young plants, around 15 years old, are carefully tended for vegetative-productive balance through meticulous winter pruning, removal of superfluous shoots, thinning of clusters, and ground cover crops. The grapes rest for a short period, in cold and inert environment, in the press for the extraction of coloring from the skins of Pinot Nero. This is followed by a gentle pressing of the whole grapes, and vinification of the free-run juice in temperature-controlled steel. After a brief refining period, still in steel, the wine is bottled for the secondary fermentation, and it ages on fine lees for at least 30 months in a constant 14°C environment. The final dosage settles at around 8 g/l of sugars.
The Pinot Nero Metodo Classico Brut Rosé from Monsupello presents a delicate pink color, illuminated by a creamy effervescence. On the nose, it offers delicate hints of dog rose, geranium, wisteria, red fruits, tangerine peel, ripe apple, Mediterranean herbs, and buttered bread. The palate is very fresh and savory, with a certain structure and a bittersweet finish reminiscent of rhubarb. Excellent with both cured meats and wild Sockeye salmon.
