The **Spumante Passerina Brut di Velenosi** comes from 100% Passerina grapes grown in the territory of Ascoli Piceno. The vineyards from which it originates are located on soils that are predominantly sandy loam, at an altitude ranging between 200 and 300 meters above sea level. After manual harvesting, the grapes were processed for winemaking, which included not only a phase of controlled-temperature alcoholic fermentation, but also a short cryomaceration process, allowing the extraction of primary substances and aromas. Following the rules of the Charmat Method, the second fermentation for sparkling wine took place in an autoclave where the wine rested in contact with the yeasts for a sufficient period to characterize its aroma and taste. The entire production cycle is never less than 90 days in duration.

On the nose, it expresses aromas of pear and white pulp fruit, combined with hints of orange blossoms, acacia flowers, and delicate notes of cedar.
