ICE DEMI SEC SANT'ORSOLA: TASTING

Ice Demi Sec di Casa Sant'Orsola is a light and brilliant straw yellow, with persistent effervescence. On the nose, it has sweet notes of cotton candy, gooseberry, pineapple, lime, and hawthorn, with hints of mint. In the mouth, it is soft but well supported by acidity, with a well-present perlage but not excessive. Besides the mint and blueberries version, also served in a balloon glass with ice cubes, it can be paired with jasmine syrup, juniper berries and lime, or even elderflower liqueur, cinnamon stick and orange. Ice can thus be creatively enjoyed to start the evening, alongside iconic vol-au-vent with tuna sauce, or to finish it, with a small pastry of cream and fresh fruit.
