Corpo medioThe Prosecco Valdobbiadene Col Fondo Rifermentato di Ca' dei Zago of Ca' dei Zago is born from Glera grapes with the addition of a small part of Verdiso, Bianchetta, and Perera grown in the Valdobbiadene area, in the province of Treviso. The vineyards in question grow on clayey and loamy soils, at an altitude of about 400 meters above sea level. During vinification, alcoholic fermentation was activated by indigenous yeasts in concrete tanks, accompanied by a brief maceration of the must on the skins for 3-5 days. The second fermentation, useful for sparkling, took place in the bottle: at the end, no disgorgement was carried out. This way, a natural deposit was formed, giving the wine an unmistakable expressive characteristic.
The Prosecco Ca’ dei Zago Rifermentato Col Fondo presents itself with a pale yellow color slightly cloudy with lively bubbles. On the nose, it expresses aromas of yellow pulp fruit followed by hints of white flowers and light citrus notes. Herbaceous and bread crust notes complement the olfactory profile. The sip is intense and lively, offering great freshness and pleasantness. Excellent as an aperitif, it pairs well with vegetarian dishes and delicious seafood recipes at the table.
